Rainbow carrots have been one of my favorite finds of the past few years. Whenever I am at the grocery store getting carrots and they have any rainbow carrots, I always go for them because of how beautiful they look. I think they really make any dish look more elegant even though they are simply prettier carrots.
Now this recipe is great for the holidays as a side dish or even just for a normal weeknight meal. You can jazz up the spices if you would like, I kept them pretty simple for this recipe. Sometimes I whip up a honey thyme glaze for them or add balsamic but really, they taste so good with simple spices that I normally just stick with that.

There are naturally a variety of different colors of carrots with orange being the most popular the past few centuries. Now, rainbow carrots are generally sold together either as full size or baby carrots.

The taste difference between different colors of carrots is not terribly noticeable. There is a slight difference but overall, you can use them in place of baby orange carrots in recipes.
Can I eat rainbow carrots raw?
Yes! Just like any other carrot, you can eat it raw.
