Roasted purple potatoes are one of my go-to things to make for lunch. I know, it’s kind of weird to just eat potatoes for lunch but trust me, it’s great! I found these beauties at my local Busch’s a few months back and have been making them pretty regularly since.
Now you can get crazy and experiment with different spice blends to use on the potatoes but for this recipe I stuck to pretty basic spices. Feel free to add more in or try completely different spices. One of my favorite spice blends to use on purple potatoes is a maple spice blend and it is surprisingly good!
