Having lived in the UP for quite a few years, rutabaga’s prescence in the regional classic – the pasty – was always there. I’d see it everytime I went to the grocery store but apart from the pasties I’d get from my local pasty shop, I had never had them nor heard of them. After using them in a stew one time, I was sold and since then I have been experimenting with different ways of cooking them with one of my favorites being roasting rutabaga.
This is such an easy side dish and a great way to give rutabaga a try. It is a strongly flavor root vegetable but it really grows on you!
