I will admit, I am a dinner roll hog during the holidays.  With bread being basically my favorite food, I always am snagging extra rolls during any meal that they are out.  Because of that, I know that I always have to bring extras to any holiday event and this year, it is going to be these cornmeal dinner rolls! Now it may sound crazy – cornmeal being used in a dinner roll – but hear me out, it adds just the right amount of texture and flavor to the rolls and they turn out tasting amazing!

What can I use cornmeal for?

Cornmeal has so many uses! Some of my favorites include –

What goes best with dinner rolls?

I love to serve these dinner rolls with a little bit of butter and sometimes even jam (such as blueberry or raspberry) or if I want them to be more savory, I throw a bit of butter, parmesan, and fresh parsley on (as shown in pictures) after they are done baking.

Are corn grits and cornmeal the same thing?

No! Cornmeal is more finely ground while corn grits are courser.

Cornmeal Dinner Rolls - A delicious side dish perfect for the holidays or any other weeknight meal. The cornmeal gives these rolls the perfect texture!

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 2 tablespoons sugar
  • 1 package active dry yeast (1/4 ounce)
  • 1 teaspoon salt
  • 1 cup water (warm, 120-130 degrees F)
  • 3 tablespoons butter (melted)
  • 1 egg

Instructions

  1. In a large mixing bowl, combine cornmeal, flour, yeast, salt, and sugar before mixing. Add in warm water and mix until well combined before adding in water, butter, and egg. Mix until fully combined. The dough should be soft, yet sticky.
  2. Transfer dough to a floured surface and knead for about 6-8 minutes. The dough should become smooth and elastic. Place dough in a greased bowl and cover with plastic wrap. Let rise for 1 hour or until the dough has doubled.
  3. Punch the dough down before transferring to a lightly floured surface. Divide into 16 evenly sized balls. Place in a greased 9x13" pan and cover with plastic wrap again. Place rolls in pan and let rise 30 minutes. Preheat oven to 400 degrees F.
  4. Place in the oven and bake for 15-20 minutes or until they are golden brown. Serve warm with butter.
