Ham and Potato Soup – This recipe is the perfect way to use up leftover holiday ham! Ham, potatoes, carrots, celery, and onion cooked together in a creamy broth.

Ham and Potato Soup
Call me crazy but I am more of a holiday ham person than a turkey person. While I do love making a slow cooker turkey breast on occasion, I prefer to have either my famous maple dijon ham or honey mustard ham during the holidays. I love that flavor and I find it so much more exciting than turkey! No matter how much I like it though, I am always trying to figure out ways to reinvent all of the leftovers we have every holiday season. There are only so many times you can eat plain old ham before you need to jazz it up!
One of my favorite ways to use up leftover ham is to make a ham and potato soup. This classic is so cozy that you really could make it outside of the holidays and enjoy it just as much! Made with lots of leftover ham, carrots, celery, onion, and potato, it is filling and makes quite a few servings so if you still have guests over, it will be enough to feed everyone.
